What do you think of self-hosting these videos as mp4 and using plain html video tag instead?

Given that Youtube is increasingly user hostile.

I think it depends on how self-hosted it will be. Self-manage storage with backup might be overkill while a S3 bucket might be fine.

It is also a question of discoverability outside our documentation. Ideally people should be able to find us by internet searches.
