[Dashboard] Feature: Add Webhook Analytics

Notes for the reviewer

This PR adds a new webhook analytics page to the dashboard, allowing users to monitor webhook performance metrics. The implementation includes:

  1. New API endpoints for fetching webhook analytics data
  2. Charts for visualizing webhook latency and status codes
