Initial work to add some basic tracking with PostHog.
We should investigate privacy concerns/regulations, for example we're able to read opened file paths, the user's username - but we probably shouldn't!
I think we can merge this in as a first step without issue - or this can be rebased onto the proper nextflow repo after the copilot work gets merged in.
