NGF: Update Helm values where required for 2.0

Proposed changes

Problem: Some of the instructions relating to Helm values haven't been updated to reflect the changes from the CP/DP split

Solution: Updated the tracing and Helm install docs in this respect

Closes nginx/nginx-gateway-fabric#3243
