Since #6042 messed up the radio, it was reverted #6121.
The reorganising of the SPI definition had to be redone.
Did not merge master into pr because it caused some other commits to be included
Added the reorganisation of the SDCard SPI definitions back (now with SPI1 for rak4631)
Added SPI selection for RAK4631 to variant file. Because default is SPI and it needs SPI1 for SDCard
