docs: Remove vpcId from LoadBalancerConfiguration documentation

Description

The docs for LoadBalancerConfiguration contained a vpcID field, however this field is not declared in the CRD schema and was never implemented in the gateway types. I thus removed it from the docs. I locally built the docs to verify the changes look correct.
