Explicitly state Sphinx configuration path (aiidalab#1080)

This PR addresses a recent ReadTheDocs deprecation. See https://about.readthedocs.com/blog/2024/12/deprecate-config-files-without-sphinx-or-mkdocs-config/ for details.
