Fixes OpenSearch starting troubles by pinning the OpenSearch version to the last one not requiring to set the `OPENSEARCH_INITIAL_ADMIN_PASSWORD` environment variable. Closes cernopendata#3634
Pins SQLAlchemy version to 1.4.1, fixing pip install troubles with newer version due to its incompatibility with older SQLAlchemy-Utils.
