Fix to the modified product jumping to bottom of the cart

Instead of appending the updated foundProduct to the end of the cartItems array we can:

//update foundProduct quantity
foundProduct = { ...foundProduct, quantity: foundProduct.quantity + 1 };

//splice foundProduct back into its original index
newCartItems.splice(index, 0, foundProduct);

//update state
setCartItems([...newCartItems]);
