Remove master from code-freeze and fix release branch regex (#978)

Fixes adoptium/temurin-build#3703
As per PMC discussion, "master" branch removed from freeze
And corrected (confirmed this works on temurin-build repo) the release branch freezin

To run full set of tests, use "run tests"; a subset of tests on specific jdk version, use "run tests quick 11,21"
