This pull request updates the self-hosted SwanLab version from v2.8.0 to v2.8.1. The changes include updating the version references and release notes in the README files, as well as updating the Docker image tags and version variables in the Docker Compose files, installation scripts, upgrade scripts, and image pulling scripts.
