Clean up warnings by specifying extensions and explicitly hiding matplotlib strings. Update copyright. Slightly reorder for toc at bottom.

Fix some broken content, update some content for newer MetPy APIs, clean up our authorship and MyST config, and clear outputs for all committed notebooks.
