Question: how to change overwrite to insert?

Use the insert key. Unfortunately it cannot be inputted directly with mac keyboard. I'll add an additional shortcut for it.

You can also define a custom shortcut for it: Open Tools -> Option -> Keys, then expand Commands -> Editor, click the last item (ecToggleInsertMod), then you can add a custom shortcut.

Sorry, I made a mistake. I thought it was Text Mode.

Hex Mode is always overwrite for now, the only way to insert text is Pasting.
I will evaluate the difficulty to enable insert change overwrite status in hex mode, if it's not very complicated, I will add this feature in 3.2.

Say sorry for it cannot implemented recently. Because in hex mode, characters are inputed by paired hexadecimal number, and it will be complex with insert status.
