Update README

Description:

The goal of this issue is to update the README file with the most up-to-date information. The Gifs that are currently used are outdated and should be replaced with new Gifs showing off the latest UI. The Login section within the Roadmap section does not have a Gif at all, so one will need to be created, as well as a description about the functionally of the Login page.

It is also worth-while to state that because the README is much older than the current version of the application, the descriptions within the Roadmap section may need to be updated as well.

Details:

• Update all the current Gifs and Images in the read me to show of the latest UI.
• Include a Gif for the Login section within the Roadmap section of the README.
  • Add in a description about how the Login functionality works.
• Update the outdated descriptions for all other sections 'Roadmap' section of the README.

If anyone assigns themself this issue let me know. I have videos of all the actions needed for the README. I was having a difficult time trying to create high quality gifs, they all came out much too blurry, even after shortening the clips and making sure the file size was not too large.
