I noticed this issue regarding React 19 support. This repository seems to have been somewhat inactive for the past 3 years, so I took the initiative to create a version that supports React 19. You can check it out here: @shiueo/react-katex. It may help with your projects, and I'm happy to hear any feedback if you decide to give it a try!
