Beef up the scallop-example vignette

  1. Add a data dictionary.
  2. Remove columns that are not needed, but be careful about things that are in the video tutorial.
    • PERMIT.y could get rename to PERMIT, that was a merge leftover
    • ZoneID could get dropped.
    • Plan Code doesn't vary, although we could use it to call out the feature of summary_stats to identify that there is only 1 unique value for this column.
