Consider using jsonrpsee for Model Context Protocol SDK

I propose we use the jsonrpsee library for the Model Context Protocol SDK. This Rust library provides procedural macros that can automatically generate JSON-RPC server and client-side code.

Additionally, jsonrpsee follows the JSON-RPC specification, ensuring the implementation meets the standard.

connecting this thread to some discussion on #30. This could be a good call in the future. I'd suggest we work through the existing suggestions first until we have a stable interface, and then decide to replace just the backend with jsonrpsee if we see it reduces code, makes it more reliable etc
