Transition from explicit context nesting to telemere's trace capabilities

The current way we do logging looks something like this:

(logs/log :info "my message" :ctx {... a big map with everything related to the context })

Since the release of com.moclojer/components v0.1.1, this method becomes obsolete, since Telemere supports trace capabilities, we wouldn't need this architecture anymore.

So this will be the new norm:

(telemere/trace {... context ...}
  (do-work
    ...
    (logs/log :info "my message")))

this will be worked here: #361

After playing around a bit, this is what our logs look like now: way more structured and search friendly
