There is apparently a possibility to disable or destroy the plugin at runtime. I couldn't find in a short term how to do this but the visual component already exists: https://github.com/meilisearch/strapi-plugin-meilisearch/blob/main/admin/src/containers/Settings/PluginActions.js

Only missing is the action once you click on disable or destroy
