Some access logs like in nginx or squid log-format should improve debugging of proxy connections.

This is definitely good to have! So far you can work it around with --debug option which will expose some go-proxy internal logs.. though those logs are far from being structured :) Somehow I missed the logs in my TODO.. thank you for the reminder :)
