docs: improve documentation about bundles and compatibility

There are few/non-clear documentation on how Invenio modules are compatible among them, and their relation to invenio and its bundles.

The lack of docs causes confusion. E.g.:

• Version 1.1.3 causes conflict with invenio 3.1.2 and invenio-celery invenio-accounts#306
• Versions conflict invenio-i18n with invenio 3.2.1 invenio-oaiserver#184
