Support new `subject` field request

Context

In version v1.1.0 of the open-payments-specifications, we added support for being able to request subject information. We should now add support for this feature in the Node SDK.

Todo

• Update the open-payments-specifications submodule to use version 1.1.0
• Generate the new types for the grant request (and response)
• Support requesting subject AND/OR access_token in the grant request
