automate the process of obtaining/updating ICESat-2 product variable lists

Currently, to update the list of variables for each product this script must be run locally and manually. It would be great to trigger this process and create an updated json of variables via a GitHub action (ideally via a cron to check for updates when new data versions are released, which would also require storing and checking product versions).
