This is a weird error because you say you're building 0.51.0 commit but your compiler is looking for XKB_KEYMAP_FORMAT_TEXT_V2 which was introduced in 38169c8 .
From that commit onwards you need at least xkbcommon 1.10 or newer IIRC and yours says Found xkbcommon, version 1.7.0
