Update collections tutorial to make use of the Upload->collection interface

It would be good to rewrite the beginning of the collections tutorial (https://github.com/galaxyproject/training-material/tree/main/topics/galaxy-interface/tutorials/collections) to make use of the newer interface for creating collections when updating.

I don't want to assign this to myself yet, but I'm hoping to have time to work on it after next week.
