Many images and code examples are not redable in the documentation when viewed in dark mode.

Everything should be readable in all modes.

Observed Behavior

A clear and concise description of what happened instead.

Sometimes black-colored text on a dark background, etc.

Steps to reproduce the behavior:

1. Go to https://eclipse-edc.github.io/
2. Switch to dark mode
3. View all pages
4. See different problematic parts
