Documentation: document that the graphiql playground is disabled by default in production #3158

The problem
The fact that the graphiql playground is disabled based on the NODE_ENV variable is not mentionned in the documentation

Proposed solution

Add a Callout in src/pages/docs/features/graphiql.mdx in the Disable GraphiQL section to explain that behavior.
Something like: Not specifying how GraphiQL option will default to the GraphiQL playground being disabled if NODE_ENV is set to "production"

What do you want to achieve?
Do you want to keep the graphiql enabled in production?
in all environments?
