Nightly tests failing on Mac GH actions

Probably it's happening because of abiosoft/colima#994 as it seems the GH are not running with Sonoma

From what I could find:

• current macos-latest is ARM64 architecture (https://github.com/actions/runner-images?tab=readme-ov-file#available-images)
• nested virtualization is not available until macos 15 and M3 proc (https://github.com/douglascamata/setup-docker-macos-action?tab=readme-ov-file#arm64-processors-m1-m2-m3-series-used-on-macos-14-images-are-unsupported) => this won't be happening soon since github has only recently upgraded to M2 (Pro): Actions: M2 Pro Powered macOS runners (GA) github/roadmap#984

If the goal is to build ARM64 arch images, I don't see any way to do it. If it is to check MacOS, then we can use macos-13 which uses X86 arch.

No idea, sorry. I know @christophd wanted to keep maintaining this action, he may provide some help.

Then I will fix the failures with macos-13 and create a new issue specific to ARM64.

There is still a stability issue.
