I'd love to know if you've considered making the autostart of kiosk a systemD user service like I use there? Happy to submit a PR when I get some time, it basically gives a little more control and status and auto-restart.

No, I haven't.
The main reason for a service would be the auto-restart IMHO.
But in our experience Chromium runs very stable on the Pis with Pixel/Jessie. We never had any crashes with it, so we never thought about a service. Should be no problem doing it with Ansible and I would happily accept your PR.
