Feature Request: It would be awesome if tag prefix could be configurable

A common scenario is to maintain multiple cookbooks within the same repository but on different branches if private cookbooks are limited and cookbooks are private too. Without the ability to configure the tag prefix, stove cannot be used.

vx.y.z is a standard. I do not plan to support anything different since I think consistency is more important in this case. Other tools assume the existence of vx.y.z as a tag, so I don't want to encourage breaking that behavior.
