- 1 long English cucumber, cut in half lengthwise
- 2 tablespoons rice vinegar
- 1 tablespoon chopped mint or dill
- 2 cloves garlic, grated on a microplane or mashed to a paste
- 1/2 teaspoon red pepper flakes or aleppo pepper
- 1/4 teaspoon kosher salt
- Slice the cucumber thinly with a knife or on a mandoline.
- Combine the cucumber in a bowl with the other ingredients.
- Allow to sit, refrigerated, for at least 10 minutes to allow the flavors to meld.
