Build system assumes Linux, ignores macos

I'm going down the bioconda rabbit hole trying to understand how to better debug a recipe on MacOS.

I noticed that this doc page is exclusively written for Linux. MacOS doesn't use docker for builds for example, but this isn't mentioned at all.
