Especially on VMs, installing ubuntu server is very easy. Pure bare-metal is more of a chore but not that big of a deal because new nodes are created very infrequently (only 2 new nodes in the past 2 years for example).

However, maybe talos is "ready for prime time" and it would be good to give it a good try with a new cluster.
