Closing tab does not release memory

Hello,

A very simple test : I had opened two tabs on amphi and read a parquet file on each. I then close the two tabs. The used RAM hasn't changed at all.

The only way I see is to shut down Amphi.

Correct, kernels are not shut down when closing a tab
You can manually shut them down when right clicking on the file:
