Make trustchain work with regtest and signet

This would significantly improve testability and experimentation.

Currently, the experience is painful waiting for blocks to get mined etc.

Is it possible to add support for regtest, not sure what would be required?

Also signet, and specifically custom signets like https://mutinynet.com/ would be great to support.
