Attempting to build ImHex on MacOS Big Sur, cmake incorrectly determines clang version, similar to issue #910

When I discovered an issue similar to #910 but occurring on Big Sur and with a few other differences in the details, I posted a response to that closed issue.

It might be that #910 needs re-opened or that a new separate issue should be created.

But before taking either of those directions, it occurred to me that the problem might lie within cmake rather than in the ImHex build script for MacOS.

Since I'm not familiar with some of the tools involved in the build, perhaps someone reading this discussion can offer a helpful comment.

I just needed to rm CMakeCache.txt.
