Buildfailures with Setuptools v >= 78.0.0

Making a note here that at the moment datamapplot won't build as Pyqtree won't build with the newly release setuptools versions >= 78.0.0 as the metadata format with dashes was depricated (see PR karimbahgat/Pyqtree#21).

The fix for now is to use a slightly older setuptools. Hoping this gets fixed upstream.

The setuptools deprecation was rolled back and paused until 2026: pypa/setuptools#4911. However, Pyqtree looks unmaintained atm. We'll see if this gets fixed before the updated deprecation date.
