Add text encoding support, please !

Add a text encoding option for send settings.

When send strings, if the text encoding between two sides is not the same, it will cause garbled characters.

Screenshots
Example:

line1-2: receiver is utf8
line3: receiver is gbk

Encoding option can be added beside the "pure text" option.
