Describe the solution you'd like:
360 videos can already be edited in OpenShot, I've tested stitched Samsung Gear 360 videos and Insta360 X3 videos, though the export requires 2 tricks that seem low-hanging fruits that can be added to OpenShot out-of-the-box:
I had to create a new Profile 5.7K 5760x2880 (Insta360 X3 resolution). Note that most (all?) stitched 360 videos are 2:1 DAR
I had to use a Google tool to rewrite the exported video only to inject "Spherical Video" metadata (more info here)
Despite of this new request resolution, I'll be happy to contribute a section to the OpenShot docs describing how to work with 360 videos if I'm pointed to the right page/section.
Describe alternatives you have considered:
I work with Insta360 Studio, which is proprietary software with limited editing features and doubtful long-term support.

I am not sure how you custom created your new profile, but with OpenShot v3.3.0, you can now do it in two easier ways vs. manually creating by duplicating an existing profile text file then making your changes. Those two ways are:
Option 1
From the main menu tool bar, click on the Profile icon (the film strip).
Find a profile that is the closest to what you want to create or just any profile.
Right click on it and select Duplicate.
For the Description, give it something unique and then set the rest of the values as needed.
Click Save and now you have your new profile.
Option 2
Import your file into OpenShot.
From the Project Files window, right click on your imported file and highlight Choose Profile.
a. If OpenShot has the matching profile for your file, it will be displayed. You can select this profile to set the Default profile for this project to match your video.
b. If OpenShot does not have that profile in it will give you the option to Create a new profile.
Update: I have put this in the queue as well for the lead developer to review and approve/reject. If the link does not get you directly to it, just click on Filters at the top right of the page and search for "Export 360" excluding the quotes.
