• Develop terraform config to create Jetstream2 persistent disks
• Get inspiration from https://infrastructure.2i2c.org/howto/features/storage-quota/ and try enabling jupyterhub-home-nfs

Definition of Done

• There is a Jetstream2 disk with jupyterhub-home-nfs running associated with a dummy jupyterhub deployment
• Infrastructure docs are updated to include the Jetstream2 instructions
